Step by step
Soak the bread in water and squeeze lightly. Chop the parsley.
Mix bread, beef, onion, oil, herbs and seasoning until cohesive. Refrigerate for 30 minutes.
Divide into four, flatten and place 40 g feta in each centre. Seal carefully without cracks.
Brown both sides on a grill or in a pan. Finish in a 180°C oven if needed for the thickness; allow roughly 15–20 minutes in total.
Use a food thermometer: this stuffed version should reach 74°C at the centre. Rest briefly before serving.
SMALL DETAILS, BETTER RESULTS
Tips for a good result
Do not press the patties with a spatula. A well-sealed edge keeps the cheese inside; crust colour does not indicate the centre temperature.
Serving ideas
Serve with potatoes, salad and lemon. Contains milk and gluten; check the bread ingredients too.
